これまでにない大型新商品！フルーティー且つ超辛口「双竜銜玉」ぜよ！
今回は、フルーティーで且つ超辛口っちゅう、本来は相容れん酒質タイプを実現した、これまでになかった新商品、「司牡丹・双竜銜玉(そうりゅうかんぎょく)」(超辛口・純米吟醸酒)をご紹介さいていただきますぜよ。
令和7年9月10日(水)に開催された「第49回・日本名門酒会全国大会」の司牡丹ブースにて、何点かの限定酒が披露されたがやけんど、そん中でひときわ輝いちょった新商品が、「司牡丹・双竜銜玉」（超辛口・純米吟醸酒）やったがよ。
こん時ゃあ、まだラベルが完成してなかったき、ラベルデザインのサンプルをご覧いただきもって、ノーラベルのお酒を皆さんに試飲してもうて、大好評やったがやき。
ちなみに「双竜銜玉」たぁ、二匹の竜が玉を銜（くわ）えちゅう様子を表した言葉ながよ。
実は昨年、日本名門酒会本部から無理難題ともいえる新商品の要望が、司牡丹酒造に出されちょったがやき。
そりゃあ、近年流行りのフルーティで華やかな香りを持ちながら、味わいは超辛口っちゅう純米吟醸酒ができんかっちゅう提案やったがよ。
近年流行りの香りの華やかな純米吟醸酒と、極めてキレがえい超辛口酒は、実は本来は相容れん酒質タイプながやき。
華やかな香りを出そうとすりゃあ甘めに振れ、超辛口にしょうとすりゃあ香りが減じてしまうもんやき、司牡丹杜氏の浅野も当初は、「こりゃあ無理。美味しいもんにゃあならん。」っちゅうて断っちょったがよ。
けんど、日が経つにつれてチャレンジ精神がむくむくと湧き出してきたかしらん、浅野杜氏の方から「挑戦してみたちえいですよ。けんど美味しいもんにならんかったら発売は見送って、チビッとずつ普通酒にでも混ぜて処分しますきに。」っちゅう返答があったがやき。
七割がた美味しいもんにゃあならんやろうっちゅうことで、低い成功予想確率じゃああったけんど、ワシ自身も、もし実現可能やったら是非とも飲んでみたいっちゅう好奇心が勝り、挑戦にGOサインを出したがよ。
ほいたら……不可能やと思われた華やかな香りと超辛口の味わいの両立を、浅野杜氏は見事に成し遂げたがやき！
使用原料米にゃあ、高知県産の酒造好適米「土佐麗」を使うて、精米歩合は60％としたっちゅうがよ。
ほんで、ポイントは使用酵母で、こちらにゃあカプロン酸エチル(リンゴ様の香り)を高う出す高知酵母「CEL19」と、熊本酵母らあに近い風味を出す高知酵母「H21」っちゅう、2つの酵母を混合で使用したっちゅうがやき。
香りはフルーティーやけんど発酵力が弱い「CEL19」と、香りはそれほど高うはないけんど発酵力が強い「H21」を併用することにより、フルーティー且つ超辛口を実現できるがやないかっちゅうて、浅野杜氏は考えたようながよ。
そうは言うたち、香りと味わいの共栄点を見い出すためにゃあ、そのモロミ発酵は綱渡りのように絶妙に精緻な管理が必要とされたっちゅうがやき。
そりゃああたかも、香りの「竜」と味わいの「竜」がせめぎ合いもって、共に高め合うて、バランスの取れた美味しさっちゅう一つの「玉」を双竜で支え合うちゅう姿、すなわち「双竜銜玉」の如し……っちゅう意味から、この酒名が採用されたっちゅうわけながよ。
ちなみに「双竜銜玉」は、我が町佐川町の隣村である高知県高岡郡日高村の小村(おむら)神社に祀られちゅう国宝！「金銅荘環頭大刀拵・大刀身（こんどうそうかんとうのたちこしらえ・たちみ）」の環頭に見られる装飾でもあるがやき。
「金銅荘環頭大刀拵・大刀身」は、高知県にゃあ3つしかない国宝の1つで、小村神社の創建は西暦587年といわれちょって、その頃(つまり古墳時代！)のもんとされちゅうき、今から1400年以上も前の大刀拵と大刀が、美しい状態で残されちゅうっちゅうもんながよ。
この大刀拵と大刀は、小村神社の御神体でもあり、年にわずか1日だっけ11月15日のみに一般公開されゆうがやき。
11月15日っちゅうたら、坂本龍馬さんの誕生日で命日でもあり、双竜の環頭を持つ国宝の公開日とおんなじ日に生まれ、おんなじ日に亡くなったっちゅうんは、まっこと不思議な縁を感じてしまうっちゅうもんながよ。
ワシゃあなかなか都合がつかいで、「金銅荘環頭大刀拵・大刀身」の本物はまだ見たこたぁないがやけんど、そのレプリカやったら「村の駅ひだか」店内に展示されちょって、いつじゃち見れるがやき。
こちらに掲載しちゅうがは、そのレプリカの画像ながよ。
さて、「司牡丹・双竜銜玉」(超辛口・純米吟醸酒)の特徴やけんど、デリシャスリンゴのようにフルーティーな品格ある香りを持ち、淡いながら麗しい味わいが口中でやわらかに膨らんだあと、後口は心地えいばあ爽やかにキレていくがやき。
日本酒度は＋8前後の超辛口で、グルコース濃度も低いきに、後味に甘みを残すことものうて、合わせる料理の素材の良さを、出汁のように下から支えて押し上げ、グッと引き立ててくれる、食中酒の最高峰やといえるがよ。
「司牡丹・双竜銜玉」(超辛口・純米吟醸酒)は、720mlサイズ1本2,255円(消費税別)約2,300本限定で、「日本名門酒会」加盟の地酒専門店のみにて限定販売されゆうきに、是非ともご堪能いただきたいがぜよ。
